A lean, tender cut taken from the hind leg, the Denver leg is made up of several well-trimmed muscles that can be cooked whole or sliced into steaks. With a rich, clean flavour and minimal fat, it’s perfect for roasting, pan-searing, or grilling. Best served medium-rare to retain juiciness.
